Wine Maker Notes

The hand harvested grapes are gently destemmed and crushed, before going into stainless steel tanks where the primary fermentation takes place with a controlled temperature of 28 Celsius, in order to preserve the integrity of the fruit.

After pressing, the wine is racked into cement tanks, where it goes through the malolactic fermentation, and is kept on his fine lees until the bottling.
